Onion Soup with Gruyere

Number of Servings: 4

Ingredients

    1 tablespoon extra-virgin olive oil
    2 tablespoons unsalted butter
    6 medium onions, thinly sliced
    salt and pepper to taste
    1 teaspoon ground thyme
    1/2 cup dry sherry
    2-1/2 cups shredded Gruyere or Swiss cheese
    A few sprigs of fresh thyme leaves for garnish

Directions

Over medium heat in a large pot, add olive oil, butter and sliced onions. Season with salt, pepper & thyme. Cook, stirring frequently for 15 to 18 minutes. Add sherry to deglaze. Add 6 cups stock, cover and bring to a boil. Remove bay leaf.

Preheat broiler to high and toast bread slices (french bread or gluten free bread). Arrange crocks on cookie sheet. Ladle in soup. Float toast on soup and add shredded cheese. Sprinkle fresh thyme leaves on cheese and broil until cheese melts and bubbles.
