Introduction

Best ever minestrone soup - healthy and wonderful full flavor for very few calories. I'm always disappointed when I don't double the recipe because the leftovers are a quick and easy lunch or dinner that is very filling. I'm always disappointed when I don't double the recipe because the leftovers are a quick and easy lunch or dinner that is very filling.
Number of Servings: 12

Ingredients

    1/4 c olive oil
    1 onion chopped
    2 cloves garlic
    2 carrots sliced
    2 stalks celery sliced
    1 leek sliced
    2 - 14 oz cans diced tomatoes
    1 qt chicken broth (can use bouillion + water)
    1 tbls parsley flakes
    2 tsp dried basil
    1 tsp oregano
    1 tsp salt
    1/4 tsp pepper
    2 cans red kidney beans drained
    2 cups shredded cabbage
    1 medium zucchini sliced
    1/2 cup uncooked shell macaroni
    Parmesan cheese on the side (optional)



Directions

Heat oil. Add all ingredients up to and including leek. Saute till onion is tender. Add tomatoes & liquid. Stir in broth, parsley and spices. Bring to boil. Reduce heat. Add kidney beans & cabbage. Cover and simmer for 20 minutes. Stir in zucchini & macaroni. Simmer uncovered 10 minutes more. May serve with Parmesan cheese. Makes approx 12 1-cup servings.
