Veggie Loaded Fritta

Introduction

Number of Servings: 4

Ingredients

    4 large eggs
    1 orange pepper, finely chopped
    1 cup of cooked broccoli, chopped
    3 large scallions, sliced
    1 thin slice of ham, chopped
    1/4 cup of reduced fat cheddar cheese
    Cooking spray
    Pepper

Directions

Pre-heat oven to 375. Spray an oven proof skillet with cooking spray. Saute scallions, then orange pepper, then broccoli until softened.

Meanwhile, whisk eggs until fluffy.

When veggies are cooked to your liking, pour in eggs and cheese, and sprinkle with black pepper.

Place skillet in the oven and cook until eggs are firm and browned (15-20 minutes).

Serve with fruit and a side of spinach salad.

Serves 4 with sides, or two large servings alone.
