4 red potatoes with skin, cut into cubes
1/4 cup Vegenaise
Juice of 1/2 a lemon
2 large celery stalks, diced
4 green onions, diced
1/2 tbs. garlic powder
2 strips vegan bacon
2. Cook vegan bacon until crispy. Crumble into bits.
3. Add lemon juice, Vegenaise, celery, onions, garlic powder and vegan bacon bits to potatoes. Mix until potatoes are well-mashed and the ingredients are mixed-in and evenly disributed.
4. Chill for 2 hours, until cold.
5. Serve on a hot day with veggie sandwiches!
Makes 4-5 Servings as a side dish
