Kale soup

Number of Servings: 4

Ingredients

    1/2 Cup Green Lentils
    1/2 Cup Quinoa (I like to use half-and-half)
    1/2 Medium Onion, finely chopped
    4 Tbs Olive Oil
    1 Small Bunch Kale
    4 cups veggie broth
    1 cup water
    1 tsp Cumin, heaping
    1/2 tsp Cayenne Pepper
    2-3 Tbs Tamari or Soy Sauce
    1 TBS sesame seeds

Directions

Wash and de-stem kale, tear the leaves into smallish pieces. Heat oil in a large pot over medium heat, and add quinoa and lentils and onion. Sautee for a few minutes, add cumin, cayenne and kale. Mix well. Add water and broth and bring to a boil. Cover and turn down heat to low. Simmer for 35-40 minutes. Add chick peas and simmer for 30 more mins.

Carefully blend the hot soup with a hand blender. Add soy sauce stir and simmer for 3 more mins.

Garnish with sesame seeds that have been toasted in a dry pan over medium for 3-5 mins.

Makes 4 - 2.5 cup servings.
