Country Lentil Soup

Introduction

Number of Servings: 16

Ingredients

    7 cups of water 2 bay leafs to be removed later
    2 cups split peas or lentils 4 stalks of celery diced
    2 cups diced onion 1 sm green pepper diced
    2 cups diced ham 4 minced cloves garlic
    1-4inch diameter head cabbage diced
    1 tsp each tarragon, oregano, thyme
    4 cups canned tomatoes (no salt added)

Directions

In stock pot that holds at least 25 cups, place ham bone, 2 bay leaves, 7 cups of tap water and bring to boil. Needs to be at least 1/2 hour to bring out good flavour. Remove the bay leaves and bone. Rinse and and split peas, ham, onion, celery, green pepper, garlic, cabbage, and spices. Bring mixture to boil and simmer until the peas are soft and the cabbage is clear. 1/2 hour before ready to serve, add the canned tomatoes. Best served with hearty whole grain bread. Makes a very nice change of pace on a cold winter evening.
