Mediterranean Quinoa

Introduction

Ingredients

    8 oz. boneless, skinless chicken breast
    3 cloves garlic
    2 tbsp. olive oil
    salt and pepper to taste
    1/2 cup dry quinoa
    1 c. reduced sodium, fat-free chicken broth
    2 c. fresh spinach
    1/4 c. chopped green onion
    16 grape tomatoes, halved
    1 tbsp. fresh oregano
    2 tbsp. lemon juice
    2 tbsp. pine nuts
    1/2 c. nonfat feta cheese
    1 avocado, diced or sliced

Directions

Makes 4 servings
Add quinoa and chicken broth to a small pan, bring to a boil, then cover and reduce heat to a simmer. Cook about 15 minutes, until broth is absorbed.
Cube chicken breast and season with salt and pepper. Mince garlic. Heat the olive oil in a large skillet and add chicken and garlic. Cook chicken until done-no pink is visible inside.
Add quinoa to the chicken, then add spinach, green onion, tomatoes, oregano, and pine nuts. Toss to mix. Cover skillet and heat on low 5-10 minutes, enough to heat the mix through and wilt the spinach a bit, your preference. Add feta cheese and avocado. Toss lightly and serve.
