Introduction

I made roasted chicken and lite mashed potatoes last night, so here's today's frugal dinner. Use whatever veggies appeal to you, this is what I had on hand today. Make sure frozen veggies are thawed and ones with a long cooking time are precooked. Short cooking veg, like zucc, or mushrooms can go in raw. Ingredients

    3 cups leftover mashed potatoes that were made with about 1/4 cup 2% milk and nothing else
    1/4 cup 2% milk
    1 egg, beaten
    1/2 cup whole wheat flour

    Left over chicken picked off the carcass -- I had 2 thighs and 2 wings this time
    2 cups cooked or canned yam, cubed
    2 cups cooked or canned green beans
    1 cup yellow corn, canned, fresh or thawed
    2 cups chicken broth
    leftover gravy (I had 1.5 cups)

Directions

Remove the meat from the bones and save the bones to make a broth with onion, garlic, herbs and enough water to cover. Simmer for about 4 hours, then strain out broth into a bowl. I freeze the rest of my broth to use later. Or use prepared broth or bullion.

Mix together the chicken bits, broth, gravy and veggies, if you have no gravy you might want to add 1/4 cup whole wheat flour and another cup of broth to the mix and heat through in a pan.

Place the chicken and veggie mix in a casserole dish or divide into ramkins.

Mix mashed potatoes, milk, beaten egg, and whole wheat flour together and top chicken and gravy mix with it.

You can dot the top with butter or spray with cooking spray for crisper top. Don't forget to add the butter to your nutrition tracker!

Bake at 350 for 30 to 45 min. -- until bubbly at the sides and a little browned on top.
