IntroductionVery flavorful, moist chicken with light sauce! Very flavorful, moist chicken with light sauce!
1 med onion, chopped
2 clove garlic, minced
1 Tbs olive Oil
1 can pineapple, drained, reserving 1/2 c juice
1/4 c Rum, I used Malibu
2 c chicken stock
24 oz chicken breasts
add pineapple & juice, cook 1 minute.
remove from heat, add rum & return to heat, cook 1 minute.
add chicken broth, simmer until liquid reduced by 1/2.
(if using raw chicken, saute in another pad & cut into bite size pieces, then add. I used baked chicken I took off bone).
cook 3 minutes to let chicken absorb sauce & serve.
Great over rice or by itself.
