Roasted Sweet Poatatoes and Parsnips

Introduction

Tasty root veggie side dish, full of flavor and low on calories. Tasty root veggie side dish, full of flavor and low on calories.
Number of Servings: 4

Ingredients

    1 Medium oniion, cut into 1 inch chunks
    2 medium sweet potatoes, cut into 1 inch chunks
    4 medium Parsnips, scliced and cut into 1/2 inch halfmoon pieces
    Parkay Original Spray, about 10 sprays, spray to taste
    3 Garlic cloves, minced
    Salt and Pepper to taste

Directions

Chop and add all ingedients together in a foil lined baking dish or roasting pan. Bake in oven for 35 minutes at 425 degrees or until potatoes and Parsnips are soft but not mushy.
