Grilled Vegetable Salad

Ingredients

    2 zucchini, quartered horizontally
    2 summer squash, quartered horizontally
    2 red, yellow or orange bell pepper, quartered
    2 large or 4 small tomatoes, chopped
    1/2 large onion chopped
    1 tbsp extra virgin olive oil
    1 tbsp grill seasoning
    1/2 tsp salt

Directions

Heat a grill

Combine zucchini, squash, peppers, oil and grill seasoning in a large bowl. Place these vegetables on the grill and grill for 2-3 minutes on each side. Just until they are crisp tender and a bit charged. Once, these vegetables are off the grill, roughly chop and combine with the rest of the ingredients.
