Introduction

This is a quick and easy soup to make. Use as much or as little curry you like. This is a quick and easy soup to make. Use as much or as little curry you like.
Number of Servings: 4

Ingredients

    Extra Virgin Olive Oil, 2 tbsp
    Garlic, 3 cloves (chopped)
    Red Onion ( chopped ), .5 cup (Shallots & other onions can be used too
    Shoprite Frozen Broccoli Cuts entire 5 cup bag
    Goya Red Kideny Beans 2 15oz cans
    Water, tap, 1.5 cup (to make as watery or thick as you like)
    Bay leaf
    Curry powder, 3 tbsp
    Ground Cumin 2-3 tsp




Directions

In a heated saucepan pour in the olive oil
Add garlic and onion and cook for a few minutes until golden and translucent
Add the broccoli and cook until it is tender but still green
Add the kidney beans and water
Add the bay leaf and spices
Let come to a boil and simmer for two-three minutes then serve
