Black-Eyed Pea Gumbo

Number of Servings: 8

Ingredients

    1 tablespoon olive oil
    1 medium onion, chopped
    1 medium green bell pepper, chopped
    5 stalks celery, chopped
    1 cup minute white rice
    3 cans (15 oz) black-eyed peas with liquid
    1 (10 oz) can diced tomatoes and green chilies
    1 (14.5 oz) can diced tomatoes
    2 cups chicken broth
    2 cloves garlic, finely chopped
    16 oz beef smoked sausage, chopped
    Cajun seasoning to taste

Directions

Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender. Pour in the chicken broth. Mix in black-eyed peas with liquid, diced tomatoes and green chilies, diced tomatoes, smoked sausage, and garlic. Bring to a boil,reduce heat to low, and simmer 30 minutes. Stir in rice and continue to simmer for 15 minutes or until rice is tender. Season to taste with cajun seasoning. Add water if soup is too thick.
