Fettuccine Primavera

Ingredients

    4 oz fettucine
    1/2 c cauliflowerets
    1/2 c snow peas
    1/4 c broccoli florets
    1/4 c julienned carrot
    1 T oil
    1/2 c julienned zucchini
    1/4 c julienned sweet red pepper
    3 cloves garlic, minced
    1/3 c chicken broth
    1/4 c grated Romano cheese

Directions

Cook fettuccine. Stir-fry cauliflower, snow peas, broccoli and carrot in oil for 2 minutes. Add zucchini, sweet red pepper and garlic, stif-fry until crisp-tender. Stir in chicken broth, reduce heat, cover and simmer for 2 minutes. Toss with fettuccine. Sprinkle with cheese.
