Susan's Fiesta Beef Chili

Number of Servings: 10

Ingredients

    1 lb well trimmed round steak or other lean cut cut of beef cut into 1" cubes
    2 cups (1 lb) mixed dry beans, sorted and rinsed. We like black, kidney, pinto and great northern in equal quantities.
    2 T. dried onion
    3 T. chili powder
    2 T. dried cilantro
    2 T. dried organo
    1 T. cumin
    1 t. garlic powder
    1 t. salt
    1 1/2 T. beef bouillon granules
    8 cups water
    1 14.5 oz can tomato sauce
    1 28 oz can diced tomatoes

Directions

In large Dutch oven mix raw beef, dry beans, and seasonings together. Add water, bring to a boil. Cover reduce heat to simmer. Cook until beans are tender 1 1/2 to 2 hours.

Do not add tomato products until beans are tender. Acid in the tomatoes can stop the cooking process.

Once the beans are tender add the tomato sauce and diced tomatoes. Bring to a boil. Cover reduce heat and simmer for 15 minutes. Makes 10 generous 1 1/2 cup servings.
