Barb's Creamy White Chili, Low Fat version

Introduction

I received this recipe from a co-worker and adapted it to reduce the fat and calories by substituting nonfat milk for the whipping cream and using nonfat sour cream. Number of Servings: 6

Ingredients

    2 lbs Chicken breast, cooked and diced
    1 large onion, diced
    3 cans Great Northern Beans, rinsed
    2 (14oz) cans Chicken Broth
    1 (7 oz) can green chilies, diced
    1 Tbs Garlic Powder
    2 tsp Salt
    2 tsp Cumin
    2 tsp Oregano
    1/4-1/2 tsp Pepper
    1/8-1/4 tsp Cayenne powder
    2 C Sour Cream, nonfat
    1 C milk, nonfat

Directions

Add chicken, onion, beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat and simmer, uncovered, 30 minutes. Stir in sour cream and milk. Serve immediately. Serves 6.
