Crispy Tofu Lettuce Wraps


Crispy Tofu Lettuce Wraps

Introduction

Number of Servings: 8

Ingredients

    1 packages Extra Firm Tofu
    4 Tablespoons Soy Sauce, Divided
    teaspoons Salt
    teaspoons Black Pepper
    cups Chopped Scallions
    1 can Sliced Water Chestnuts
    3 Tablespoons Chopped Garlic
    3 Tablespoons Chopped Ginger
    3 Tablespoons Rice Vinegar
    2 Tablespoons Sesame Oil
    2 Tablespoons Sugar
    2 Tablespoons Water
    2 Tablespoons Olive Oil
    cups Pine Nuts
    cups Slivered Almonds

Directions

Preheat oven to 450F.

Dry the tofu and cut into cubes. Toss the tofu in a bowl with 2 tablespoons soy sauce, salt and pepper.

Spread tofu out on a baking sheet and bake for 30 minutes until golden and crisp.

In a large skillet over medium-high heat, saute the garlic and ginger in olive oil for 3 minutes.

Add tofu, chestnuts, scallions, vinegar, remaining soy sauce, sesame oil, sugar and water and heat 5 minutes or until liquid is absorbed.

Meanwhile, fry pine nuts and almonds in a dry skillet over medium heat until golden, about 4 to 5 minutes.

Transfer tofu mixture to a bowl and stir in the nuts.

Serve in lettuce wraps or over rice, with hoison sauce.

Makes 8 Wraps
