Cucumbers & Onions in Vinegrette

Introduction

This is a great make ahead side dish. Wonderful in the summertime. This is a great make ahead side dish. Wonderful in the summertime.
Number of Servings: 4

Ingredients

    2 Cucumbers sliced
    1 large Onion sliced
    Vinegrette:
    1/4 cup oil
    3/4 cup cider vinegar
    1/4 cup splenda
    1 tsp dill
    1 tsp celery salt
    1 Tbsp mustard seeds


Directions

Mix vinegrette and pour over cucumbers & onions. Mix well and marinate overnight in vinagrette.

    Very Cool,Crisp,Crunchy and tasty! Reminds me of the Vinegrette my mother use to make when we were young. I loved it. Will definitely be making it again.
    I did use sugar a little less than 1/4 cup in mine as I don't use splenda. - 7/13/07

    One of my friends mother made this last weekend and it was wonderful! It was cool, crunchy and yet a little bit on the spunky side! I'm making this for July 4th but I'm doubling it so I can eat a bunch of it myself. LOL - 6/28/07

    tastes okay made it with sugar instead of splenda because splenda is bad for you....but added extra cuke and extra vinaigrette to the mix so could be sure there would be enough to go around at my daughters birthday party cookout tomorrow! We are having this as a side dish to the cookout! - 5/14/10
