Ingredients

2 pkg chopped spinach, frozen
2T butter
2T flour
2T onions finely chopped
2T celecry finely chopped
1 garlic clove finely chopped
1/2 cup nonfat evaporated milk
1/2 cup reserved spinach liquid
1/2 tsp black pepper
4 oz pepper jack cheese in 1/4 inch cubes
salt and red pepper to taste
1 tsp Worcestershire sauce
Directions
Cook spinach according to directions on package. Drain and reserve spinach liquid. In a medium saucepan, melt butter over low heat. Add flour, stirring until blended and smooth, but not brown. (This will be a dry mix because butter is reduced.) Add onions, celery and garlic and saute 3-5 minutes or until wilted. Add evaporated milk, 1/2 cup of spinach liquid and Worcestershire sauce slowly. Cook mixture until smooth and thick, stirring constantly. Add seasonings and cubed cheese. Stir until melted and combine with cooked spinach. Serve immediately or store and reheat. The flavor is better the next day. 6 servings.
