To save time, vegetable broth or stock can be used instead of the dried mushrooms and water.

Ingredients

6 dried mushrooms
2 qt. water
1 tsp. olive oil (optional)
One carrot, diced
One celery stalk, diced
One small onion, diced
I can black-eyed peas, drained and rinsed
1/2 pound frozen greens of choice - collards, turnip, mustard, kale, spinach, etc.
1 diced tomato
1 cup low sodium tomato juice or vegetable juice
Directions
If making mushroom stock:
Place dried mushrooms in water and bring to a boil.
If using vegetable stock, heat until boiling.
While this works, saute the carrot, onion, and celery in the tsp of olive oil (or water saute if desired) until soft. Add veggies to boiling mushroom stock and continue to boil for one minute. Reduce heat and add beans, tomato, greens, and vegetable juice. Simmer for 10 minutes and serve.
