Introduction

A Middle-Eastern lentil dish. We love it over brown rice with caramelized onions on top. Also good with a splash of balsamic vinegar. Ingredients

    3 c water
    1 c lentils
    1 onion, chopped
    1 clove garlic, minced
    1 bay leaf
    1/8 tsp thyme (opt)

Directions

Combine all ingredients in a large saucepan or pot. Bring water to a boil, then reduce heat and simmer for 35-45 minutes, or until lentils are tender. The mixture should be thick.
