This is my first attempt to mimic the amazing boiled tofu soup at Tofu House in San Diego. The flavors aren't quite right, but it was still yummy and filling. Ingredients

2 cups chicken broth
0.5 block firm or extra-firm tofu, chopped into cubes
2 cups (or more if desired) fresh spinach
3 scallions (not in nutritional info; they're for flavor and not eaten)
Fresh sliced ginger - 1-3 slices, more for spicier soup
1 clove garlic, sliced
1 Tbsp. hoisin sauce
0.5 Tbsp. soy sauce
1 egg (optional, included in info)
Directions
Mix chicken broth, 3 whole scallions, ginger, garlic, and hoisin and soy sauce.
Bring to a boil.
- at this point, you can either allow the soup to simmer for 10 minutes and then strain to remove scallions, ginger, and garlic, or you can just pick them out as you eat the soup.
Add in tofu and stir in spinach. Allow to boil a few minutes, until spinach is fully wilted. Stir in snap peas. Crack egg in boiling soup just before serving.
Let cool enough to eat but best if eaten hot :-)
