Peanut Butter-Choco Chip Cookies (GFCF)

Introduction

Great recipe for anyone on a diet restricting Gluten and Casein. Very simple.
Just mix all ingredients, spoon onto cookie sheet, flatten with fork. Bake at 350 degrees for 7-9 minutes.
Serving size is 1 cookie. Very rich.

Number of Servings: 18

Ingredients

    one cup-8oz granulated sugar
    one cup-8oz peanut butter
    one teaspoon vanilla
    one cup chocolate chips (may use less)
    one large egg

Directions

Preheat oven to 350 deg. Line cookie sheet with parchment paper.
I recommend mixing the cup of sugar and the egg first. Add the cup of peanut butter, and the vanilla until all is well blended.
Add the chocolate chips last. May want to use half of the chocolate chips.
Drop by spoonful and press down with fork.
Bake for 7-9 minutes.
Cool for at least 5 minutes, cookies crumble easily when hot.
