Vegan Sweet Potato Blondies

Introduction

Ingredients

    3/4 cup mashed cooked sweet potato
    1/2 cup vegetable oil
    2/3 cup sugar
    1/2 cup dark brown sugar (i just used turbinado sugar in place of both sugars)
    1/4 cup nondairy milk (i used coconut kefir)
    2 tsp vanilla extract (or if you don't have any, use whiskey!)
    1 1/4 cup unbleached flour
    1/4 tsp baking powder
    1 tsp ground cinnamon
    1/2 tsp ground ginger
    1/4 tsp allspice
    1/2 cup chopped nuts and/or 1/2 cup chocolate chips, optional. (this recipe is without)

Directions

Mix together mashed sweet potato, oil, sugars, 'milk', and vanilla until smooth. Add in the flour, baking soda, spices. Do not over-mix. Just mix enough to combine. Add chocolate or nuts if using. Pour batter into an 8x8 pan. Smooth out the top, because it doesn't rise very much. Bake for about 30 minutes, or until toothpick comes out mostly clean.

I cut mine into 16 squares; each square counts as one serving.
