This is easy to make and gives you the freedom to adjust ingredients, such as salt and red pepper flakes, according to taste or diet restrictions. My family acutally prefers this to the fattier store bought pork sausage. Ingredients

Turkey, Ground turkey, 93% lean, 16 oz
Salt, 1 tsp
Garlic powder, 2 tsp
Pepper, black, 1 tsp
Fennel seed, 1 tsp
Caraway Seed, 1/2 tsp
Celery seed, 1/8 tsp
Crushed red pepper flakes, 1/2 tsp
Directions
Combine ground turkey with spices and mix with fingers until well incorporated. Heat skillet and add turkey mixture, cooking until done and no longer pink. Drain, if necessary, and use as desired.
Be aware that if you use leaner ground turkey you will need to add a tablespoon of canola oil to the pan.
I like to make up 2-3 lbs of this and freeze it for later use in soups, pizza or pasta.
