Introduction

Number of Servings: 26

Ingredients

    1lb dried split peas (454g,;1/2 of 2lb bag;;2.5C)
    6 quarts tap water
    1.5 lb ham bone, (resulting in 311 g or 13.1oz of ham meat)
    2 med onions, chopped
    1T salt (or to taste)
    1teas black pepper (or to taste)
    2 teasdried marjoram
    2.5 teas cardamom
    4 stalks celery, chopped
    4 large carrots, chopped


Directions

Simmer water, seasonings, and ham bone for about 1 1/2 to 2 hours. Remove ham bone, let cool. Add split peas to water from ham and let simmer for about 1-2 hours. While peas are simmering, remove meat from bone, discarding fat and bone. Add ham back into soup (with peas and water). When peas have simmered 1-2 hours, then add the rest of the vegetables, and simmer for another hour until vegetables are tender.
This makes 26 1-Cup servings.

This soup has all the flavor of traditional split pea with ham soup, but not as thick. If you like thicker soup, you can use more split peas, or add a chopped peeled potato or two when adding the other vegetables (carrots and celery). This would change the calorie count per cup, however.
