Split Pea Vegetable Soup

Ingredients

    4 cups low sodium chicken broth
    2 cups chopped onions
    2 cup diced green beans
    2 tbsp olive oil
    4 ounces lean ham, diced
    2 cups cole slaw (or cabbage)
    1 cup dried green split peas
    1 tbsp garlic

Directions

Heat olive oil in soup stock pan. Add onions and saute until begins to soften. Add rest of ingredients and let simmer covered for 45 minutes until split peas are done (may need to add water to pan). Makes 4 2-cup servings.
