Vegitarian Fajita Caserole



Introduction

Number of Servings: 6

Ingredients

    2 Large Whole wheat tortillas
    1 Can fat free refried beans (any brand about 1 3/4 cups)
    1 Package Wholly Guacamole (or your own about 1 1/2 cup)
    1 Cup black bean and corn salsa
    1 Cup green bell pepper chopped
    1 Cup red bell pepper chopped
    1/2 Cup red onion chopped
    8 Brocoli flourets
    3/4 Cup sliced fresh mushrooms
    7 OZ Galaxy Veggie Shreds Cheddar and Pepper Jack
    2 Tsp taco seasoning
    Olive Oil cooking spray

Directions

Preheat oven to 475F.

Coat an 8X11 baking pan with the olive oil spray. Lay tortillas in the baking pan so that they come up on the edges. Spread refried beans on top of the tortillas then guacamole and then the salsa on top. Sprincle a little of the taco seasoning on top of the salsa. Spread onions, peppers, mushrooms and brocoli on top of salsa layer. Sprinkle with a little more taco season, lightly coat with olive oil spray, sprinkle reamainder of taco season, or to your taste, and spray one more light coat of olive oil on top.

Bake untill onions and peppers begin to get tender, usualy about 30 minutes, then take the dish out and spread the veggie shredds on top. Cook untill the veggie shredds are completely melted.
