Ingredients



    * Butter, unsalted, .75 cup
    * Egg, fresh, 3 medium
    * Granulated Sugar, 1 cup
    * Orange Juice, .25 cup
    * Vanilla Extract, 1 tbsp
    * *Flour, white, 2.25 cup
    * Baking Powder, 1 tsp
    * Almonds, 1 cup, chopped
    * Raisins, 1 cup, packed
    * Lemon Extract, 1 tsp
    * Cinnamon

Directions

Makes 24 1/2-inch pieces.

Cream butter, eggs and sugar in a large bowl until smooth.

Then add the orange juice, vanilla, and lemon extract and mix until combined.

Add baking powder and flour, mixing just until combined

Add raisins and nuts and mix by hand.

The consistency of the batter should not be runny. If it is, put it in the refrigerator until it is somewhat firm.

Shape into a loaf on a non-stick flat cookie sheet. and bake at 350 for 25 minutes.

Let cool, but don't turn off the oven!

Mix 1/4 cup of sugar and cinnamon to taste

When the loaf is comfortable to touch (about 10 minutes) carefully slice into 24 pieces (lengthwise and then in half)

Place the cookies back onto the baking sheet and sprinkle with cinnamon and sugar mixture. Bake again for 10 minutes.
