Nutty Chicken Stew

Introduction

Serve with rice or egg noddles. Serve with rice or egg noddles.

Ingredients

    2 tbl cooking oil
    1 chicken (3 to 3 1/2 lb, cut into pieces
    1/2 tsp black pepper
    1 onion, chopped
    2 tbl tomato paste
    1 cup crushed tomatoes, drained
    1/4 tsp cayenne
    2 3/4 cup water
    1/2 creamy peanut butter
    1 10 oz package frozen sliced okra

Directions

Fry chicken with the oil seasoned with 1/4 each salt and pepper about 8 minutes, or until browned (browning will be minimal without the skin). Remove. Pour off all fat except one tablespoon.
Reduce the heat to moderately low. Add onion and cook for 3 minutes. Stir in tomato paste, tomatoes and cayenne. Return chicken legs and thighs to the pot with 2 cups of water. Simmer and cook partially covered for 10-15 minutes.
Whiisk together the peanut butter and remaining 3/4 cup water until smooth. Add this to the stew with remainning chicken, 1 1/2 tsp salt,, 1/4 tsp pepper. Cook partially covered for 10-15 minutes. Add okra and continue cooking until okra is just done, about 10 minutes.
