Pumpkin & Tomato Soup

Ingredients

    1 tbsp olive oil
    2 cups onions, minced
    1/2 tsp ground nutmeg
    2 cups canned unsweetened pumpkin
    2 cups canned crushed tomatoes
    1/4 cup finely chopped parsley
    2 cups fat free, low sodium chicken broth
    2 cups water
    1 cup fat free plain yogurt
    3/4 cup soft tofu

Directions

Saute onions in olive oil until soft. Stir in nutmeg, pumpkin, tomatoes, water, chicken broth and parsley. Bring to a boil, then lower heat and simmer 5 minutes. Remove from heat and stir in yogurt and tofu. Puree.

Makes 10 - 1 cup servings.
