Introduction

Ingredients

    1 chicken breast (skinned and boned)
    1 tsp wholegrain or dijon mustard
    3 tsp semi skimmed milk
    1/4 cup cheddar cheese (grated)
    1 leek (chopped )
    1 small baked potato
    1/2tsp olive oil

Directions

Preheat oven to 200C/Gas mark 6.
Slice chicken in half, then beat with a rolling pin until it has thinned out a little.
Place chicken in an oven-proof dish which has been greased with the olive oil.
Add mustard, milk and cheese into a pot and simmer until cheese has melted.
Add the mix to the chicken and cook in oven for 20mins or until cooked through.
Serve with baked potato and leeks.
