Karen's Chinese Chicken Noodle Soup

Introduction

This is an easy, lo-cal soup to make with lots of antioxidants to protect you during cold and flu season. Depending on how spicy you like it, you can increase or decrease the amounts of white and cayanne (red) pepper. Number of Servings: 12

Ingredients

    Makes 12, 1 cup servings

    1 pkg of Chinese Noodles (120 calories per 1/4 pkg)
    1/2 Rotisserie Chicken
    1/2 pkg of bean sprouts
    1 c celery
    1 c carrots
    2 sm onions
    1 bunch leeks
    1 bunch parsley
    64 oz of fat-free chicken broth
    1 tbsp white pepper
    1 tsp cayanne (red) pepper
    1 tbsp black pepper
    1 tbsp salt

Directions

In large soup pot, add all ingredients except noodles and let simmer for 20 minutes until veggies are par-cooked. Then add noodles and let simmer for another 20 minutes. Serve immediately. This reheats great!
