This soup is easy to make in the crock pot, and it's almost a stew. It's spectacular on it's own, but you can add sour cream and/or a few crushed tortilla chips if you want something more robust. Ingredients

1.75 lbs chicken (about 3 boneless chicken breast halves or 5 boneless chicken thighs)
1 can (15oz) kidney beans
1 can (15oz) great northern beans
2 cans (15 oz) diced tomatoes
1 can (4oz) diced green chiles
1 can (8oz) tomato sauce
1 medium onion, chopped
1 tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/2 tsp paprika
1/4 tsp oregano
1 1/2 tsp ground cumin
1 tsp sea salt
1/4 tsp ground black pepper
1/2 cup chicken broth
Directions
Place onion, all canned veggies, and all spices into a large crock pot. Mix everything together well. Push chicken pieces into the mixture and make sure they are covered. Cover, and cook in crock pot on high for 3 1/2 hours. Remove chicken from pot, shred with a fork, and return to crock pot. Cook on high for another 30 min.
