Thai Shrimp & Rice

Ingredients

    1/2 tsp coconut oil
    1/4 cup finely chopped onion
    1 tsp crushed garlic
    1/2 cup coconut milk
    1/2 cup brown rice
    1/2 cup shredded carrot
    1/4 tsp sea salt
    200 grams shrimp, cooked
    1 cup snow peas (snap peas)
    pinch crushed red pepper flakes

Directions

Heat oil in a large non-stick pan. Saute onion and garlic 1-2 minutes. Add coconut milk and 1/2 cup water. Bring to boil. Add rice, carrots, pepper flakes and salt.
Cook until rice is nearly done. About 50 minutes. If rice looks dry, add another 2 tbsps of water (approx). Add shrimp and snow peas and cook for another 3-4 minutes.
