1/2 c uncooked quinoa
1 c. beef broth
1 tsp. olive oil
2 cloves of garlic, sliced thin
1 c. fresh spinach
4 oz cooked lamb kabobs or leg of lamb, Cubed.
1 med tomato (chopped)
1/2 c. diced cucumber
1/2 tsp dried mint leaves/or 2 fresh leaves chopped fine
1 oz feta cheese
Makes 2 servings.
