Number of Servings: 4

Ingredients

    1 tbsp olive oil
    Chicken tenders, frozen, 16 oz
    Onions, chopped and frozen, 1 bag
    1 large sweet yellow pepper, cut into strips, about 1 cup
    1 large green pepper, cut into strips, about 2 cups
    2 cups sliced fresh mushrooms
    1 tsp garlic powder or fresh chopped, if available
    1 tbsp Italian seasoning
    1/4 tsp red pepper flakes
    2 cup canned tomatoes, no added salt
    1 8oz can plain tomato sauce

Directions

Heat olive oil in a nonstick skillet, on medium high, add chicken and brown. Remove chicken and set aside.
Add all other ingredients. Bring to a boil,cover and simmer on low for 25-30 minutes, stirring occasionally. . Return chicken to skillet and continue cooking until chicken is heated thru, about 5 minutes more

Serve over rice or pasta
Serves 4
