Oatmeal Raisin Drops

Introduction

Number of Servings: 32

Ingredients

    1/2 c. plus 1 T. whole wheat flour
    3-3/4 oz. oats, uncooked
    1/2 t. baking powder
    1/2 t. baking soda
    1/4 t. cinnamon
    1/4 c. brown sugar or sucanat
    5 T. butter
    1 egg
    1 t. vanilla
    2 T. water
    1/2 c. raisins

Directions

Preheat oven to 375 F.
Combine all dry ingredients, except raisins.
Add butter and mix with fork until it resembles coarse crumbs.
Add egg, vanilla and water and stir well.
Add raisins and stir until everything is moistened.
Drop my teaspoonfuls onto ungreased cookie sheet, making 30-32 cookies.
Bake 10-12 min. until light brown.
Remove to a rack to cool. Enjoy!
