Baked Tilapia

Introduction

My husband hates baked fish, but I was determined to find a way for him to eat fish without frying it (I don't need the carbs). This is what I came up with and both he and my 3 year old son loved it. My husband hates baked fish, but I was determined to find a way for him to eat fish without frying it (I don't need the carbs). This is what I came up with and both he and my 3 year old son loved it.
Number of Servings: 5

Ingredients

    5 frozen tilapia filets, about 4 oz each
    1/2 cup Hellman's Mayonaisse
    3 tbsp lime juice
    2 tbsp honey
    2 tsp yellow mustard
    Italian seasoning
    Italian bread crumbs (approx 1/4 cup)

Directions

Makes 5 4oz servings

Preheat oven to 400. Spray bottom of shallow baking dish with non-stick spray.

Mix mayo, honey, lime juice, mustard and Italian seasoning together until smooth. Coat both sides of frozen filets, place in single layer in baking dish. If there is any of the mayo mixture left, spoon over the filets. Sprinkle with bread crumbs until fish is covered.

Bake approx 15-20 minutes or until fish is flaky.

*** I cooked this for about 10 minutes, then broiled for 3 to get a nice brown topping. After broiling the fish, it still wasn't flaky so I put back in at 400 for about 5 more minutes.

Serve with wild rice and carrots for a nice meal.
