Ingredients

1 Cup Brown Rice (2 when it is prepared)
2 Cups Pacific Organic Roasted Red Pepper & Tomato Soup
1 Can Diced Tomatoes with Green Chiles (I used Tops)
1/2 Cup Scallions chopped
1 Cup Carrots shredded
1/2 Cup Tomatoes Cherry chopped
1/2 Cup Mushrooms chopped
1 1/2 Cup Boca Ground Burger
1/4 Cup Pablano Pepper chopped
1/4 Cup Mexican Cheese
1 Tbls. Olivio
1 pkg. Simply Organic Sloppy Joe Seasoning
Black Pepper, Garlic, Chili Seasoning to taste
3 Cups water
Directions
Chop vegetables, toss all ingredients into rice maker & stir. Turn on rice maker, when it finishes check rice for doneness...if it is a little to al dente turn back on for a little longer. Can top with a sprinkle of mexican cheese, sour cream &/or Cilantro (will need to calculate these additions in to your nutritional data)
