White Bean Soup

Introduction

Easy and delicious - especially on a cold day!
This soup can also be done in a crockpot. Saute the onions first - that is where a lot of the flavor comes from - then place all ingredients in the crockpot, stir; then simmer for approximately 4 to 6 hours. Delicious!

Ingredients

    1 Tbsp. Olive Oil
    1/2 cup finely chopped onion
    3 cups Low-Fat, Low-Sodium Chicken Broth
    24 oz pkg 95% lean cubed ham
    2 cans (19 oz) Cannellini beans
    2 cans (16 oz) Navy beans
    2 cans (15.5oz) Great Northern Beans
    2 tsp. Italian seasoning
    1 tsp. garlic powder

Directions

In a dutch oven or large sauce pan, saute olive oil and onion until onion is golden brown. Add all remaining ingredients and bring to boil. Simmer for 8 to 10 minutes or until soup is thoroughly heated through. Serve immediately.
Serves 12 (approx. 1 cup serving)
