Introduction

Number of Servings: 8

Ingredients

    Lean Ground Beef = 1 lb.,
    Kidney Beans = 1 can (12-16 oz),
    Corn = 1 can (12-16 oz),
    Diced Tomatoes = 1 can (10-12 oz),
    Tomato Paste = 1 can (6 oz)(optional for thick),
    Tomato Sauce = 1 can (12-16 oz),
    Green Salsa = 1 can (6 oz),
    Onion = 1 medium or large,
    Taco Seasoning = 1 package,
    Tortilla Chips= optional (not listed in nutrition info)

Directions

Dice onion. Brown ground beef with onion.

In a LARGE (crock-pot sized) pot combine cooked beef and onion and all other ingredients (do NOT drain the cans!).

Stir until well mixed. Cook on high until soup begins to boil. Reduce heat and simmer for 30 minutes.

Makes 8 servings of 1 to 1 1/2 cups each (depending on can sizes used).

Tip: This dish is wonderful when poured over slighlty crushed tortilla chips in the bottom of your bowl!
