Ingredients

    1/2 cup canned mushrooms (chopped)
    3oz canned artichoke hearts (chopped)
    1 cup cooked spinach (chopped)
    1/3 cup parmesan cheese, grated
    1/4 cup 2% milk shredded cheddar cheese
    2.5 C egg substitute

Directions

Mix all ingredients, divide evening among muffin pans. Bake until eggs have set.
