Shepherd's Pie

Introduction

Number of Servings: 6

Ingredients

    1 T olive oil
    1 C onion, diced
    2 cloves garlic, minced
    1 lb lean ground beef
    1 12 oz can diced tomatoes
    1 1-oz packet McCormick Au Jus Gravy
    3 large potatoes
    4 T unsalted butter or margerine (1/2 stick)
    8 oz low-fat sour cream
    salt to taste
    milk as needed

Directions

Place diced potatoes in a large pot, cover partly with water, cover with lid and bring to a boil.

While potatoes cook, heat oil in large saucepan. Add onion and garlic, saute until onions are softening. Add ground beef, saute till there is no more pink.. Add tomatoes and juice, then seasoning packet, stirring to combine.

Heat frozen vegetables according to package instructions. Add to beef mixture and stir to combine. Pour meat and veggie mixture into baking dish.

Once potatoes are fork tender, drain in a colander, then return to pot. Add butter, sour cream, and salt to taste. If they are too thick, add milk to thin. Place potatoes over meat and veggie mixture, smoothing out to edges to form a crust. Bake at 350F till potatoes are browned.
