Ingredients

    8 oz pearled barley, rinsed and sorted
    1 16 oz bag of small red beans, rinsed and sorted
    1 16 oz can stewed tomatoes
    1 8 oz can of tomato sauce, no salt added
    1 jalapeño pepper or poblano pepper, chopped
    2 cloves garlic, minced
    1 tbsp olive oil
    ½ cup of dry red wine or white wine
    4 cubes vegetable bouillon
    4 bay leaves
    2 tsp thyme
    2 tsp. cumin
    ½ tsp. sassafras leaves (or file')
    1 tsp red pepper


Directions

Rinse and sort beans. Soak in cold water overnight. In a 6 quart crockpot, put drained beans, barley, tomatoes, tomato sauce, chopped pepper, minced garlic, and all remaining ingredients. Blend well. Add water to cover about 1 1/2 inches deep. Cook on low for 8 or 9 hours. Stir well before serving.

Serve over hot cornbread.
