Ingredients

    1 Yellow Onion, diced
    3 Cans Chickpeas/Garbanzos
    1 Tbsp Chives
    3 Carrots, Julienned and cut into 1" lengths
    4 Cups Broccoli
    1/2 Cup Bread Crumbs (I use seasoned)
    1 Cup Vegetable Broth
    3.5 Tbsp Olive Oil (the .5 is for sauteeing the onions)
    1 Tsp Salt
    1 Tsp Paprika
    Optional: 4 Tbsp roasted slivered almonds, for garnish

Directions

Sautee the onions. After they're translucent, take them off the heat and let them cool while you tend to the other vegetables. Chop the broccoli, chop the chives, julienne the carrots. Smash up the chickpeas in a food processor or mash by hand. Do NOT overdo it - you're not making hummus here. When everything's chopped, smashed, and measured, put it all together in a bowl and mix it together by hand -- as you would a meatloaf. Then transfer to a casserole dish. Cook covered for 45 minutes. Uncover and cook another 15 minutes for a nice crust on top. Divide into 4 portions and serve.
