Banana Whole Wheat Muffins

Ingredients

1/2 cup applesauce, unsweetened
2 eggs (may substitute 1/2 cup egg whites)
1/2 cup lowfat buttermilk
1/4 cup honey
1 tsp vanilla
2 medium very ripe bananas, mashed
1 3/4 cups whole wheat flour
1/4 cup Splenda-brown sugar blend
1/2 cup Splenda (sucralose)
3 scoops Spirutein (or other brand) vanilla soy protein powder
1 1/2 tsp baking soda
1 tsp cinnamon
Directions
Makes 18-20 regular size muffins
1. Preheat oven to 350 degrees F. Line muffin tin with baking cups or grease the cups.
2.Mix applesauce, eggs, buttermilk, honey, vanilla and mashed bananas together in a large bowl.
3. In a medium size (or larger) bowl, mix together the flour, Splenda-brown sugar blend, Splenda, protein powder, baking soda and cinnamon. Mix well.
4. Add dry ingredients to wet ones in the larger bowl. Stir together. Pour into a muffin tin which was either greased or lined with baking cups.
5. Bake at 350 degrees F. for 20 minutes, or until a toothpick inserted in the center comes out clean.
