Ingredients

    Cauliflower, raw, 1 head, medium (5-6" dia)
    Onions, raw, 0.75 cup, chopped
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    Water, tap, 2 cup
    Salt, 1 tsp
    Milk, 1%, 1.5 cup
    Smart Balance, Smart Balance Light Buttery Spread, 2 Tbsp
    *Whole Wheat Flour, 0.25 cup
    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 2 tsp

Directions

1. Heat 1 cup of water over high heat. Add cauliflower, onions, celery, salt, and seasoning. Bring to a boil. Reduce heat to medium, cover, and allow to cook for 20 minutes.

2. Put 1/2 of the cauliflower mixture in a food processor and process until creamy. Repeat with remaining mixture. Set aside.

3. In another pan, melt buttery spread. Stir in flour and cook for one minute. Add milk and whisk until mixture thickens. Stir in water.

4. Add cauliflower mixture to the cream mixture and stir until combined. Heat thoroughly and serve.

Makes 6 (1 1/2 cup) servings.
