Introduction

Number of Servings: 12

Ingredients

    Broth:
    2 Tbsp Oil
    1 large (28 oz can) Tomatoes with Green Chiles
    1 medium onion, chopped
    2 cloves garlic, pressed
    10 beef bouillon cubes

    Meatballs:
    1 lb ground beef, extra lean
    1/2 cup uncooked rice
    1 egg
    1/2 cup reserved broth
    1 cup flour

    Season and garnish (optional)
    tapatio
    cilantro, fresh, chopped

Directions

Broth:
Combine ingredients, bring to boil. Allow to cook until tomatoes begin to break down and bouillon is dissolved. Reserve 1/2 cup for meatballs.

Add in 10 cups of water. Bring back to boil while making meatballs and set to simmer. Add carrots and celery.

Mix first four ingredients for meatballs until uniform. Gradually add flour until mixture holds shape well. Make balls to desired size. Drop in broth.

Bring back to a boil. Simmer until meatballs are cooked through.

Add tapatillo to taste. Garnish with chopped cilantro.
