Lusciously Sweet Berries

Introduction

This low-calorie desert is perfect for summer picnics or to top off any meal. Adding vanilla gives this dessert a rich flavor without adding any guilt. Full of fiber, vitamin C, and antioxidants. Number of Servings: 4

Ingredients

    1.5 cup Strawberry halves
    1 cup of Blueberries
    1 cup of Raspberries
    1 tsp of Vanilla Extract
    4 tsp of Sugar

Directions

Rinse fruits & slice strawberries. Set aside.
In large bowl, add sugar and vanilla. Stir to combine. Add fruit & toss until fruit is evenly coated in sugar/vanilla.

You may add more or less sugar to taste, but this will alter the nutritional information. Raw or brown sugar may be used instead of ordinary granulated sugar for a more natural sweetner.

Makes 4 servings.

  • I don't ever eat enough fruit, and this is now my go to dessert! Just lightly sweet enough to the taste while still letting the natural tartness of the berries to come through and adding the vanilla gives it a nice kick! Yum Yum I loved it and have made it three times this week. So low in cals too! - 7/2/11

  • I use all kinds of fruit plus splenda instead of regular sugar. Top it off with a spoonful or two of Green Vanilla Yogurt. Great breakfast! We eat this 3 or 4 mornings a week. What a great way to start out your morning. - 6/30/10

  • Loved it! I ended up using blackberries instead of blueberries because the store was out, but it tasted great. I also used Splenda instead of sugar for fewer calories. Hopefully the store will have blueberries next time I go. - 9/20/07
